Crepes: Dinner and Dessert

Former pastry chef Bruce Cartwright offers a taste of France and the art and skill of making crepes. The classic haute-cuisine dessert, Crepe Suzette, uses a butter and Grand Marnier sauce with a spectacular flamed finish. The dinner course is a traditional Brittany-style crepe as served in the street market on the Avenue du President Wilson in Paris. This buckwheat crepe is filled with caramelized onions, French-style bacon, Gruyere cheese and egg. Instructor: Bruce Cartwright. CRN 21570 is offered from 5 to 8:55 p.m. Tuesday, March 6-13. Cost: $46.35.

Cat Treats and Nutrition

Prepare five homemade treats that will make your cat purr in this hands-on cooking class. Learn about proper feline nutrition and what to look for in store-bought food options. Instructor: Kate Baumann, certified animal nutritionist. CRN 21563 is from 6 to 8:55 p.m. Thursday, March 8. Cost: $20.80.

Beginning Cooking-Next Step

You've been exposed to the basics, gained some confidence and are now ready to expand on your knowledge of cooking. This hands-on cooking course will help build upon your skills by introducing more beginning techniques. Instructor: Debbie Kroes. CRN 21584 runs from 6 to 8:55 p.m. Mondays, March 12-April 2. Cost. $85.31.

Greek Diner Favorites

Recreate the classic diner meals. Instructor Stili Klikizos, a native of Greece, will share authentic techniques used to make these delicious Greek favorites. CRN 21575 is from 9 a.m. to 3:25 p.m. Saturday, Feb. 25. Cost: $46.35.

Private Pilot Ground School

This class meets from 6 to 8 p.m. Wednesday, Feb. 8-April 11 with instructor Tim Tyre, at the Waukesha County Airport Terminal Building conference room, 2525 Aviation Drive, Waukesha. Interested in airplanes? Want to learn more about engines, aerodynamics, airports, aviation, regulations, aero-medical issues, aviation weather and navigation appropriate to pilots? This class will help students prepare to take the FAA written exam for the Private Pilot Flight Certificate. Required materials available for purchase at first class, approximately $60. Fee: $300.

Eclectic Dance

This class meets from 6 to 7 p.m. Thursday, Feb. 9-March 15 (new date) with instructor Lori Upson. Get a full body workout while having fun with eclectic dances such as hip hop, pop, salsa, jazz and even a little disco. Fee: $79.

Adobe Premier Elements 8

This class meets from 6 to 9 p.m. Thursday, Feb. 9-16 with instructor Chris Jourdan. Learn to create stunning slideshows to show off your digital photos with editing, adding titles, music, graphics, transitions and more using Adobe's Photoshop Premier Elements 8. Leave with a finished slideshow DVD to take home and watch. Bring camera and downloadingequipment or images on a CD, DVD, Flash/Jump Drive. Fee: $69.

Selecting and Purchasing a Computer

This class meets from 6:30 to 8:30 p.m. Thursday, Feb. 9-16 with instructor Brian Oswald. Gigahertz, Gigabytes, Giga-What? Do Terra-bytes terrify you when looking at new computers? Discuss the jargon that you will find or hear when you go shopping for a new computer. Look at current ads for computers and sort out what it all means. Should you buy a laptop or a desktop? What features or warranties should you get? Fee: $39.

Winter Tree Identification

This class meets from 9 a.m. to noon Saturday, Feb. 11-18 with instructor Marlin Johnson, emeritus professor, at the UW-Waukesha Field Station, W349 S1480 S. Waterville Road. (A map will be sent with registration confirmation.) Students will head out in the field as they tramp through the snows of February discussing trees' role in nature, their habitat, their place in ecological succession and how they benefit wildlife. Discover the importance of individual tree species to Native Americans and how to make trees a significant part of our lives through natural landscaping. Fee: $19.

Boot Camp and Conditioning

This class meets from 9 to 10 a.m. Saturday, Feb. 11-March 17 with instructor Kristi Finco. Students can reach their personal fitness goals as they learn new exercises, modalities and programs that help them condition their bodies. Students will expand their knowledge on health and fitness and create a personal workout regimen that will get them into shape for the New Year. Fee: $79.

Zumba

This class meets from 10:05 to 11:05 a.m. with instructor Kristi Finco. All fitness levels will benefit from Zumba, "a fun, exhilarating, effective, easy-to-follow, Latin-inspired, calorie-burning dance fitness-party" workout that will get participants moving and grooving to the hottest hits. Fee: $79.

Photo Restoration Workshop

This class meets from 9 a.m. to noon Saturday, Feb. 11-18 with instructor Christina Fohr. Bring beauty back to old photographs, including those torn or in need of repair. Bring in old photographs to scan or a digital image on a flash/thumb drive and learn to enlarge, correct fading, mend tears or remove other unwanted artifacts with Photoshop Elements 8. Take home a restored image to order prints. Some computer background is helpful. Students will work in Photoshop Elements 8. Fee: $59.

Future Engineers

This class meets for ages 11-14 meets from 10 a.m. to 3 p.m. Saturday, Feb. 10 with instructor Tom Staude. A state of the art, programmable, intelligent brick serves as the brain for LEGO NXT. With four input ports for taking in data and three output ports for following your programmed commands, students learn how to power their own robot. Their imagination is the only limitation to this class. Bring a lunch. Fee: $79.
