Light Summer Meal Fresh for the Picking: Sample This Fresh Seared Sea Scallop Salad With Strawberry Vinaigrette

Summer weather has finally arrived and with it comes a plethora of produce ripe and fresh for the picking.

As locally grown food becomes an increasingly popular element in family meal planning, summer is a great time to search for homegrown ingredients that can be used to prepare healthy meal options with the fresh taste your family and friends will truly appreciate.

To lure you to the nearest farmer’s market, Laura Sneesby of Sneesby's Denoon Saloon in Muskego shares her recipe for a salivating Seared Sea Scallop Salad With Strawberry Vinaigrette dressing just in time for strawberry season. Seared Sea Scallop Salad With Strawberry Vinaigrette

What you’ll need:

·12 Sea Scallops

·1 cup Baby Arugula

·3 cups Boston Bibb Lettuce

·1/2 pound Strawberries

·1 cup Dry White Wine, reduced to 1/4 cup

·1/3 cup Champagne Vinegar or White Wine Vinegar

·1 cup Extra Virgin Olive Oil, plus 2 tablespoons for sautéing

·6 Mandarin Oranges ·1/4 cup Fresh Chopped Parsley

·Zest of One Orange

·Sea Salt

·Cracked Black Pepper

Directions:

1. Make the vinaigrette. In a food processor, puree the strawberries until smooth. Add the vinegar, orange zest and reduced wine and start the food processor. Slowly drizzle in 1 cup of olive oil until all is incorporated. Add parsley and salt and pepper to taste.

2 Make the salad. Peel and segment the mandarins. Toss with the greens and set aside.

3. Sear the scallops. In a nonstick pan on high heat, add the remaining 2 tablespoons of olive oil. When the oil is very hot, place the scallops in the pan. Cook until a light brown crust has formed – about 2 minutes – disturbing them as little as possible. Turn them over and cook for an additional 2 minutes. Remove from pan.

4. Dress the greens and oranges with the vinaigrette on a plate next to the scallops. Drizzle the scallops with remaining vinaigrette and enjoy!

Serves 6.
